BOURBON YAMS

Lindsy and I developed this recipe the first year she hosted Thanksgiving. It has a great orange flavor. Not much of the bourbon comes through. You can add more if you like! Nov. 2010

3 LBS yams, Peeled & in 1/2" slice
1/2 Orange, zest and juice
1 lemon, zest
1 c white Karo Syrup
1 & 1/2 c Dk. Brown Sugar
1 tsp vanilla
1 TBS Bourbon
1 TBS grated fresh ginger
1/2 tsp cinnamon
1 TBS flour
1 cube butter, cubed

Spray a 9x9 or 2 quart baking dish.

Boil potatoes until 3/4 done. Cool. Mix all ingredients together, except butter.
Layer cooled potatoes, sugar mixture, and butter alternately in pan until gone. Bake at 400* for 45 minutes.

Let rest 10 minutes before serving.
