SANDWICH (Whoopi) COOKIE

These would have been called whoopie cookies or cakes years ago. Pam Waters got it from her mother in Ohio.

1 Package devils food cake mix
Any flavor cake mix will work.
2 eggs, slightly beaten
1/3 c vegetable oil

In a mixing bowl, beat cake mix, eggs and oil (batter will be very stiff). Roll into 1-in balls; place on ungreased cookie sheets and flatten slightly. Bake at 350 for 8-10 minutes or until a slight indentation remains when lightly touched (its 10+ in my oven). Cool.

Divide cookies. Put frosting on half the cookies and use the other half for tops.
These have a somewhat cake texture if not baked too long.
You can use any frosting. Chocolate is always a winner.

 Marshmallow Filling
6TBS soft Butter
1 1/2 c powdered sugar
1 tsp Vanilla
1 7oz jar Marshmallow cream 
Cream butter and p.sugar. Add vanilla and Marshmallow. You may also add food color. 
Frosts 12 pies

Because I don't like to make cookies, these have always been my standby.The first ones I made were Spice cake with a Ginger frosting.
A couple years ago Oreo cookies came out with a "Cakester" almost like it. Was a little disappointing; I might could have gotten rich off that invention.
