FUDGE

FANTASY FUDGE

3 c Sugar

12 oz Chocolate Chips, (2 c)

3/4 c Butter (1 1/2 sticks)

1 7oz Jar Marshmallow Cream

2/3 c Evaporated Milk

1 c Walnuts (pecans)

1/4 tsp Salt

1 tsp Vanilla

Heat sugar, butter, milk, and salt, in a heavy sauce pan, to a full rolling boil. Boil on medium heat 4 minutes (234*), stirring constantly. Remove from heat. Stir in chocolate chips, marshmallow cream, and nuts. Stir well. Add vanilla. Pour into 9” x 13” dish. Cool.

Makes 3 pounds.

This fudge is lite but I still add extra marshmallow. I also use pecans instead of walnuts. Our preference.

PEANUT BUTTER FUDGE

3/4 c Butter (1-1/2 sticks)

5 oz. evaporated milk

3 cups sugar

1 - 7 oz. jar marshmallow creme

1 tsp. vanilla

1 cup creamy peanut butter

Add the butter to a medium saucepan on medium high heat.

Add the evaporated milk and sugar and stir together.

Bring the ingredients to a full, rolling boil for four minutes, or until thermometer reaches 234° degrees. Stir often while boiling.

Remove from heat and add marshmallow creme. Stir until all of the lumps are gone.

Add the vanilla and peanut butter and stir until well blended.

Pour into a greased  13" x 9" dish.

Cool.

I call this school cafeteria peanut butter fudge.

OLD FASHION FUDGE

2 cups sugar

4 Tablespoons Hershey’s cocoa

1 stick of salted butter

5 ounce can of Carnation Evaporated Milk

1 teaspoon of vanilla

nuts are optional

Mix sugar and cocoa in a saucepan, then add a stick of butter and the can of evaporated milk, and stir until the mixture starts boiling.

Stir continuously for 7 minutes, then remove from heat and add vanilla, then stir the mix continuously for 3 minutes, then pour into a buttered baking dish to set.

Great fudge in less than 20 minutes!

I JUST LOVE FUDGE; BEN AND JARRELL DO EQUALLY AS WELL.

2020...Benny is at sea and Jarrell was watching his sugar intake. Thank goodness for the neighbor Brian for helping finish off the fudge. I think I made 40 lbs for friends and family. Chase visited California (who loves fudge as well) and I sent 10 lbs to Georgia with him.
